you can wash ducks eggs, just use warm water not cold so the pores in the egg are thoroughly cleaned.Bit of washing up liquid is wat i use.(i presume these are for eating and not hatching?)
I'd use shavings in duck nests, because they tend to mess straw easier. and the droppings stick more.

You are correct you should not wash them because of infection, ie salmonella. Best advise is to make sure that their bedding is clean and changed regularly. Also do allow them to have water in their coop, this will help to keep the bedding/nesting areas clean.
Tip - never use duck eggs to make homemade mayonaise, hollandaise sauce etc. Duck eggs should be throughly cooked before eating.

if your incubating i use a butter knife to remove clumps of dirt and then you can gently sand down the edges aswell

I think the best thing to do is if you must wash them, wait until directly before use. No matter what way you look at it, you'll still be taking the natural bloom off the egg...so what I do is just keep the dirty eggs until I'm ready to use them, then I give them a clean beforehand. Also, Adrian is right, the shavings really help to dry up the mess...and you can still line the nest boxes with straw:)

that's an extreme tip, been using duck eggs for years to make my mayo, never had any issue except getting steadily fatter because of it!
If the birds are salmonella tested, it reduces the risk as does good hygiene in the nests.
i carry a 2 inch paint brush with me when i am lifting the eggs which cleans the majority of the eggs, if its particularly dirty its boiled up and the dogs get a treat

Sean - just following good food hygeine practice. But a plus in the duck eggs favour is that the whites make by far the best meringue. Learned that from the chefs in work.
